This is my main collecting theme after printing. I am in the process of producing a handbook covering every (hopefully!) letter box stamp, MS, stamp booklet, postmark, stationery item, Cinderella, etc. A mammoth undertaking, as there are many hundreds of stamps, let alone the other collectables.

Anyway, I attach the latest such stamp issue, which is from the Bailiwick of Guernsey, in the Channel Islands. It commemorates the sporting achievements by Carl Hester in the equestrian events, especially at the London 2012 Olympics. I suspect that Guernsey Post fought shy of including the word "Olympics" on the stamp due to the cost of paying the IOC for the use of the word.

Incidentally, every winner from Team GB has a pillar box painted gold in perpetuity, and commemorative plaques are in the process of being affixed to each box. The wording is also in Braille on the plaque.

Here is an image of a stamp depicting a girl mailing a letter, designed after a child's drawing, printed by photogravure, and issued by Japan on April 20, 1971 as one of a set of three stamps commemorating the centenary of Japanese postage stamps, Scott No. 1058.
