Looks like mittens hanging from the rafters.

He manufactures cloth of some sort.

I agree with the mittens, but think the fiber he's working with is too coarse for cloth, perhaps ready to make some rope?

I understand from an Authoritative Source that he is stuffing fresh (dry) stuffing into his boots.

ikeyPikey:
A: The man is a member of the FInnish Manufacturers Handicraft Guild Association and he is making fishing nets/traps.

Hanging from the rafters are handmade woolen gloves (mittens) made by the same Guild that hand makes men's, women's & children's sweaters, jackets, scarves, hats, gloves, and blankets from the Spælsau sheep's wool. The wool is rich in lanolin and does not absorb water easily. His wife probably part of the same Guild, making the mittens and the cap he's wearing.

Skoal!
Hal

He is a Santa Claus false beard maker.

The mittens are for wearing when holding reindeer.

To have a contradictory "Authoritative Source" reminds me of the old joke:

The nice thing about industry standards is that there are so many to choose from.

He is making "socks" with senna grass. Great insulation. See his right leg complete with "sock" so he is now completing his left side. Common with Sammi people.

I like Bas S Warwick's explanation as a "Santa Claus false beard maker." The mittens are used for milking reindeer. Reindeer don't like warm hands down there on cold mornings.
