True, it would be an issue, but then again regulations were fewer and fires more common. I did find out there was an Engles restaurant once in Lyon's, NY, but when I checked the maps it was gone - building and all so it was inconclusive. My wife was only in that position for a several years before moving into nursing. When the recession hit a while back she had to retool.

Exhaust pipe from kitchen area sounds pretty plausible...fire hazards be damned!

Also, the bird cage on top of the pastry case (foreground) is a nice touch. And don't forget the festoons of wires from the ceiling.

My own guess, raymodj, is that the waiter is holding whatever that self-satisfied guest just shot & brought in for cooking ... perhaps after he stopped at the taxidermist ... and that this was the occasion for the photograph.
