If the 5x7 size is important then these arent those. They are all 3.5" x 5.5"

how can you tell if they are contact prints?
Some of them have a very "silvery" sheen. I know they used silver for photo processing back then. Some are very matte.

Also, are photo albums a good way to store old postcards like these, at least until I figure them out?

Most photo albums aren't even a good way to store photos. Something like this would be preferable

This isn't a particularly important factor. As stated before, since you can see the (badly) cut negative edges, they look very much like contact prints. It is also suggested by the crooked images. An enlarger rig would help prevent crooked prints and the image could be sized so that the negative edges don't show. If the image sizes match one of the standard negative image sizes of the time, they are almost certainly a contact print.
