I have this postal with Crawfish KY cancel but can't find it anywhere.. Anyone have an answer? Thanks

Hima is a Clay county community just south of Manchester on Horse Creek. The source of the name is not known. Hima was a station on the Horse Creek branch of the Cumberland and Manchester Railroad, later part of the Louisville and Nashville, that operated from about 1917 into the 1930s. A Crawfish post office may have opened in 1907, but by 1920 it was known as Hima.

Clay County, KY from Hammond's "1920 New World Atlas"
Crawfish, KY in the center of the county, just south of the seat.

From the 1918 Vol11 Postal Guide. You can download and search for post offices. You often can find out when the PO was opened and discontinued by searching various years.

Crawfish, KY (1907-1920), specifically:

The U.S. Postal Bulletin #8271 dated April 17, 1907 notes that Crawfish, KY opened March 29, 1907 with Hugh Gregory as the postmaster.

Postal Bulletin 12266 dated May 24, 1920 announces the name change from Crawfish to Hima effective May 21, 1920 and that David Gregory is the postmaster.

Add:
From the "Official Register of the United States, Vol II, The Postal Service":

July 1, 1909 edition: Postmaster Hugh Gregory received an annual compensation of $38.


And from the July 1, 1911 edition, postmaster Moses Lewis received an annual compensation of $50.
