Below you will find pictures of what appears to be a company invoice on one of my covers. But, in lieu of numbers there are symbols inserted. I know its a bit off the subject, but im very curious.. Is this some kind of code or ...?

Of course it's in code. And it looks like cover fronts that were reused as note paper so there's nothing philatelic here.
