Hello Mineme and

Those are cut outs from postal cards and stationery, referred to as Cut Squares or mutilated stationery depending on your collecting interests.
The Eagle without a demonization is a part of postal card UX18 and is not the stamp, President McKinley to the left (in your first pic) was.
Below is the normal appearance of a used UX18.
