Likely circa 1970 as the trees around the pond are now real trees with considerable height and shade. Current sign is just about the same but with new name and logo.



The upstart is the Nicasio Valley Cheese company in Nicasio on the ranch running since 1919. Marin French Cheese Company, was known as Rouge et Noir from 1906 until 2013. It is outside of Petaluma on the Pt. Reyes-Petaluma which becomes D St. in Petaluma proper. The stretch of highway is also called the Red Hill Road on the PR-P Rd. It is next to the Hick Valley CDF/Marin Fire Station in rural Marin County. Petaluma is actually Sonoma County.

I was introduced to the MFCC as a teenager in the late 60's. Have some in the freezer outside right now. Yes freezing is recommended for long term storage of fully ripe brie and Camembert.


Edit: While singing the praises of the sign, I was not intending to sign the praises of the sing. At least the four letters were correct, if out of order.

I can't imagine that anyone in France would recommend freezing Camembert!

The whole idea of fully ripe brie and camembert is that you eat it,

Soft cheeses like brie and camembert have a high percentage of water. If you freeze them, you can keep them but the structure changes and the taste will go. Essentially, you are left with a cheese you can best use for cooking.

My absolute favorite meal is kale barley salad with dried cranberries, walnuts, sweet potatoes and feta cheese. Goat cheese can be substituted.

Well, I was shocked at the recommendation myself even when it came from the mail order director at HQ. She shared the secret with locals who can get great discounts on cheese overstock. Yes it works well and for fully ripe of the two mentioned. By the way the current owners of the company since 2011 is Rians fr, the respected French family of cheese producers.

But hey, perhaps were just rural red necks out here even if Marin County is know for its great wealth. We have working pickup trucks, cars to deal with the dirt ranch roads and even we feel the pinch of California's outrageous gas prices (our vehicles don't come electric yet) so we even have a small high gas mileage Smart car. We just do it our redneck-with-money-way:

Well, I'll leave the frozen cheese and wacky cars to you. My favourite Camembert is the baked-with-Calva version.

In this thread, between the OP's first post of "it is not here" and the OP's final post, "It is here," something needs to keep up the interest.

By the way it was rogdcam who first brought up cheese, brie, specifically. So if one is ready to whey charges there is the culprit. But a good Swiss lawyer could fill your cheesy hijacking story with holes, no doubt.

Since when is a Lamborghini a wacky car, GeoffHa? A pickup with just two doors and a Smart Car, now those are wacky.
