I have these two blocks of Canadian stamp #650 in Unitrade catalog
Evidently one is signed by the artist, the other isn't.
The unseigned version is worth $1.25. The signed stamp isn't mentioned in Unitrade catalog.

Can anyone tell me how the signature on a stamp influences the value of that stamp

I would say there no extra value. It might be signed by the artist, but is it?

Artists are sometimes listed, but signed items are beyond the expected scope of standard catalogs.
Retail value all depends on WHO signed it. Those associated with a stamp design/production and government/postal officials are often at the first day ceremony and sign many items. Thus a modest premium to a specialist collecting audience.
Consider a hockey stamp signed by the artist or by Wayne Gretzky. Which has the higher demand/value? Most artists are comparative nobodies when it come to demand/value.

Is this the signature. I don't a detailed catalogue to confirm.

https://en.wikipedia.org/wiki/Jean_Paul_Lemieux

Edit: reading the article it confirms he was the artist.

He is the artist, but did he actually sign it? or is a forgery?

There's no doubt that Lemieux signed stamps. It is argued rightfully tht it might be a forgery. The question now becomes if this well known artist signed stamps, is the premium associated with his signature on the value of this block worth paying for signature certification. I know of another stamp, Unitrade #1630ai that exists in signed version. In this case again, it's not listed in the catalogue but sold on ebay for around $30 over the unsigned version.
