Did the Postal Service stop issuing definitives in single series running 1c to $5 after 1987? I know that high denomination stamps occasionally were issued later than that, but I cannot tell if any were part of a continuous single theme series like the Great American series of 1986-1994; or the Liberty series in the 50s, the Americana series of 1875-81, or the Prexies from 1938 up to the fifties. Was that a concept that died with the 20th century?

I think that the lengthy definitive series are forever gone. Make that FOREVER gone as the modern FOREVER stamp is likely one of the reasons for its demise. Now we generally see two disparate series ... low values (1 to 5 cent plus 10 cent) and high values ($1 to $10).
