Does anyone know of any easy to complete stamp collecting country? It looks like most countries have at least one hard to get expensive rare stamp that makes this hard to do.

If "complete" means major Scott numbers, sure. You'd have several options, depending on your threshold for price. If the most expensive stamps have to be less than $10, that is problematic. If a couple of them could approach $100, then that is a little easier.
Being willing to mix mint and used would help, too.
Going outside of Scott will complicate things immensely. Even going to Scott Classic will introduce more listings. There might be a couple British colonies that would be approachable until you start considering inverted watermarks or overprint varieties.
Luckily, "complete" is up to you.

Please define easy. Pretty sure you could get the entire country of El Salvador for under $100. |

While collecting United Nations stamps, in 1999 U.N. Mission in Kosovo started issuing postal stamps until Kosovo became independent in 2008. After its independence Kosovo began issuing its own postal stamps ever since. They are really nice looking issues and still easy to begin collecting.One needs to buy only the Official postal stamps which are always assigned Scott numbers.There are also private issues which most collectors do not collect. I have been purchasing from a reasonable stamp dealer in the Kosovo area. Most US dealers prices were completely out of line, that may have changed. I average about $50 a year for all stamps issued plus a few dollars for Scott Kosovo supplement and mounts.

Indo China is not super expensive.. the higher end stamps will run a couple of hundred dollars each BUT there are only a few of them |

How about British Guiana? There is a difficult one, but it's going to be up for sale in the near future, so shouldn't be a problem. |

Any country can have a subset era that can make for a collecting goal - even the USA say after your date of birth or before. I know it isn't the same thing as collecting every stamp from a country but . . |

I am collecting Newfoundland - I would not call it inexpensive but it is finite since their postage ended in 1949. There are no add-ons to expand the target. |

I agree with Kionga. Couple other Portuguese colonies that are easily done would include Tete and Quelimane. If you're into Italian, try Saseno. Only 8 stamps there and it could be done for about $100 or so. |

As Scouter stated......go for a "dead country" and you can forget about the endless procession of new issues. How about Marienwerder? Karelia? About 13 stamps, you just have to watch out for the bear forgeries. John |
