For stock books, my typical preference is to have one page mint and the adjacent page used if you're going to use the same book. The risk of having them all together is if you have mostly used, you or a future collector may skim through and not notice the unused (or vice versa). The downside is if you have few of one or the other, the opposing page may be sparse. It can be a tricky balance!
Another way if you have a lot of duplicates, esp used, is to have the mint stamps spaced slightly apart and have the used ones slightly stacked beside them.
If in albums, for countries where I try to specialize a lot more, I will aim to have one album of unused and one of used. For my moderate collected countries, I may keep both and try to place them together in a mount with the used underneath and slightly sticking out. There is always the risk of stamps getting stuck together but for the countries I collect and for the conditions I store them in, this doesn't really happen.
