Just wondering what the consensus is for leaving the US Celebrate the Century stamps in their original packaging. I have a full set (don't we all?) and I wonder if there is any issue leaving them in their wrapper as opposed to putting them in archive sleeves?

Good question. I only have 1 of the sheets that I think I picked up at a yard sale. Mine's still in it's original wrapper too

I was wondering the same thing also. I've also got quite a few fdc's from the mid 1990s that are still in that sort of packaging the USPS used to use. Someone told me that they no longer do that due to "going green". Does this kind of plastic cause discoloration or aid in deterioration?

As I understand it, the plastic "shrink wrap" contains a warning "Not for Philatelic Archiving". It's best to remove it from the packaging and store them in a mount or glassine envelope or some archival safe page protector for long term storage.
