I am aware of the "Paquebot" french spelling,
but am curious as to the "Packetboat" hammer.

Maybe it isn't "Packetboat" at all?

found on US stationery, my hunch eminates from Honolulu Hawaii

I found these intriguing uses of a Packet Boat marking . . . on Australian stamps!

Apparently any passenger ship that was used to also carry mail was considered a packet boat.

I know it is not much to go on yet.

I am both happy and confused at the same time.

Your link identifies (finally) a name for those cancels
I used to call "footprints", they are in Philaspeak "ellipsoids"

Now I have to remember that :)

Now the Aussie covers,
How come they have a Hawaiian cancel and none from
Australia?

BTW, I don't think it was "any" ship,
it had to be licenced to carry mail
(well, I am speaking in a GB sense, not aware of US criteria)

The ship I immigrated from England was a packet boat
RMS (royal mail ship) Orion.

As to the Aussie stamps and Hawaiian cancels, that is easy enough to decipher. The ship was one which originated from Australia, and would have Australian postage on board for mailing letters.

As to the packet boat itsself, these were all passenger ships which had a purser or a ship postal officer who would accept mail which passengers wished to mail from the ship they were crusing in. The officer ensured they were properly franked for the country of origin of the boat, and then delivered the items to the port postal facility the next time they reached port.

Apparently there was a passenger ship line (or lines) that made trips from Sydney to Honolulu.

This link was provided earlier, but this PAGE shows several of the Packet Boat cancellations that were used from New Zealand to USA in pre-WW II days, which might be of some help:
