I tried sorting mine today and just when I think I have them in the same piles I notice slight differences in them. How many types are out there?

You need to separate these into the different issues. There are the bureau issues of the 1890's, the Washington-Franklins of 1908-1922, and the next issue in the 1920's. (The fourth Bureau issue is how I think they are described)

As it stands, your question lends itself to many answers, depending on the issue. For example, the Washington-Franklins have many types. Type I through VII, but there are sub-types within these types.

The Fourth bureau issue has also a couple of types.

You are at an easy stage now. There are varied designs with GW as the main feature. Separate the stamps by design and then separate again by perforations. After that you will need to separate by watermarks.
George Washington was on the first 10 cent US stamp. Later he became the theme for the 2 cent stamps. There are a lot of 2 cent GW stamps. It was the most commonly used and billions were printed. It also had some errors and Post Office Dept. limited trial use of compound perforations and rotary coil waste that was perforated differently.
The website www.1847usa.com is an excellent way to learn about the differences and help you along the way.

First Bureau - 4 types
Second Bureau - 2 designs, First design was 1 type, Second design was 2 types.
Third Bureau - 2 designs, First design was 1 type, Second design was 7 types.

The third bureau 2 cent has 55 major and 29 minor Scott catalog numbers and a total of 89,963,908,620 stamps were issued.

I have my 2 cent'rs broken down into 3 groups so far.
I am stuck there. I have THOUSANDS of each. I mean
a pail full of each of the 3 basic designs...
It is overwhelming. Maybe one day I'll get up
the want to work on them before my eyesight is shot.
