Yes, adhesive issues have plate numbers, but they are not attached "hard" like the stamps you have. Adhesives are on a separated strip which would only remain with the stamp as long as they are still on the original adhesive backing. Once you peel the stamp for postage it gets separated from the plate number. See image below:
Platenumbers are very much different from what they used to be, but they are still with us! The type of gum does not have much to do with the numbers, although they may change if a different type of adhesive is used.
