Doc and covers are valued by philatelists for many reasons that go well beyond mere possession of stamps. Stamps on a cover fit into bigger stories than the stamps alone can tell. Some stories revolve around the nature of the stamps, some revolve around the specifics of their use. But when the stamps are separated from the cover, most of the story they could have told is irretrievably lost.
If a person handling such covers is not sensitive to the story capabilities of the material combinations, they are well advised to leave them intact until someone more knowledgeable can expose them. For the larger long term good of the hobby.
