The following three books each contain multiple pictures of stamps featuring books.
The first two are "Printers and printing in philately" by John Alden and "Bibliately" by Leona Rostenberg. As you would expect, books about stamps depicting printing, particularly the printing of books, contain many pictures of stamps showing books.
The third book is "Brazilian literature on philately" by Lais Scuotto and Jose Afonso Braga, which shows stamps picturing subjects from Brazilian literature, and it too has many pictures of stamps showing books, and with the benefit of the pictures being in colour.

Here is one of the four 'Sparkling Holidays' Christmas booklet stamps issued by the USA on October 11, 2018. Stamps feature the illustrations of American artist Haddon Sundblom. This stamp (Sc #5334) depicts Santa perusing his Good Boys and Girls book, which is not as large as one would like.

From about.usps.com, "The four images are details from larger paintings created by Sundblom and originally published in ads for the Coca-Cola Company from the 1940s through the early 1960s."

And, from wikipedia, "Haddon Hubbard "Sunny" Sundblom (1899-1976) was an American artist of Finnish and Swedish descent and best known for the images of Santa Claus he created for the Coca-Cola Company. Sundblom's friend Lou Prentice was the original model for the illustration's Santa."
