I collect Israel but haven't paid much attention to them recently. In terms of straight, fill the holes in an album, once you get past the first couple of years, the street price for most issues are fairly low. There are in fact a number of dealers who sell the entire year's issue in a single go and , in general, it doesn't break the bank.
The early issues can be quite dear and here we are speaking of 1948 and 49 and maybe (without checking) up to 1951 or so.
The other thing that is really critical wrt value is full tabs. Israeli stamps are issued with selvage at the bottom of the pane with designs that coordinate with the stamp. Retention of this tab is critical wrt to maintaining value in the secondary market. A few issues have addition selvage below the tab and retention of this is also critical.
If you were interested in going beyond filling the holes in the album and delving into early provisional issues, pre-state and postal history, it can be a very rewarding philatelic area to explore and not lacking in interest.
