Without seeing the stamps, we can't really advise you with specifics. However, in general terms, with only 81 stamps (and 81 auction lots), I would consider listing them at the Belgian auction house, Delcampe. The rates are low, and the buyers (for the most part) are accustomed to European auction practices and payment methods; plus, most sales will take place in Euros.
Why not look at recent auction sales of early Greece (on Delcampe) and see if this is feasible? You could easily prepare 81 auction lots in a weekend. Also, if you are bi-lingual, you could profit by enhancing your item descriptions with French or German.
The value of the whole collection most likely is in the Large Hermes Head stamps. The most important factor is condition of each stamp and if the design of the stamp have not been cut into. The value can be effected by a factor of 10X .If they are mostly damaged and cut when they were separated then sell it as a whole collection is best . If the condition is VF then listing them separately would bring better prices .
