Why would anyone want to fake a stamp (besides high value)?

To sell them for postal use. There were some fake GB Machin definitives in circulation a few years ago. Books of them, say 10 in a book, would sell for 10 x face value.

Probably ?
Definitely !

And there is one of the sad things about our hobby. The law [in the UK at least] says that forgeries should be destroyed and it is illegal to sell them.

Nope !
So the 24p stamp shown is worth about $8 while the original machin is worth 60c. There are many other examples.

And they are traded openly, sold openly and everyone turns a blind eye.

We live in such a liberal world.
