Victoria looks like the blue ink is running out - the tops of both value tablets appear incomplete, or very feint. Mind you the whole stamp looks a little faded too.

Looks like a changeling; probably been sunbathing too long?

On the Queen Victoria stamps, the basic stamp color purple looks the same, but the color of the value tablets looks quite different, blue and ultramarine. I added a color sample taken from the darkest spot on each stamp, samples from the left stanp are on the left and right stamp samples are on the right in both images.

With King George the vignettes seem to be the same color, but the rest of the stamp is a different color.

That's Edward VII, not George V, chaps. Collected actresses, rather than stamps.

Your Edward 7th one shilling stamps are within normal limits. There are various colour varieties within the green spectrum including Dull Green, Deep Dull Green, Dark Green. The Red varieties include Carmine, Bright Carmine, Pale Carmine, Scarlet, Bright Scarlet. So your stamp could be a mixture of those but as every scanner and every monitor will register differently, there is no way of telling which you have unless it is side-by-side with a known variety for comparison.
