dnile - the text issue you mention is easily solved, just type it up on small pieces of paper, trim the paper with the text to fit in the pocket next to the stamp, and voila, all the info you need (and easy to move around if you decide to change the design of the page).

I've seen many collectors use this method especially when they collect specialized material like town cancels, and it works quite nicely.
