So I bought some souvenir sheets and some stamps which are already cut. Which should I buy more of, and which is more valuable/collectible. Also is one more rare or unique than the other?

I am actually not sure, haha, but I bought some stamps on ebay labbelled as souvenir sheets and some as normal stamps. Which is more valuable and which should I buy more of you think?

Without a scan, or country name and catalogue numbers, no one will be able to help you. From the sound of your post, it appears as though you are thinking in terms of an investment. If you're buying common, inexpensive stamps and souvenir sheets, you will likely end up disappointed.

Generally speaking and with a few exceptions neither souvenir sheets nor regular stamps of the past 75 years have much investment value, but they are fun to collect so that is why you should buy them. If you want to buy something that has a chance of increasing in value you should decide what country or countries you want to specialize in, buy the reference books for that country or countries and make yourself an expert to be able to tell the forgeries from the real ones then buy the early and rare stamps from the 1800s that are in perfect condition.

You would also want to become a member of one or more major stamp collecting societies and read their magazines and books and chat with their members. For example, in the September, 2018 American Philatelic Society Magazine there was an excellent article on the enormous number of modern forgeries of souvenir sheets and popular topic stamps of more than 100 countries around the world - mostly in the Caribbean, African and Middle East countries but also many from Asian and Asian Pacific countries as well. Sellers on ebay offer these all the time and do not tell people they are buying worthless forgeries. You need to become your own expert if you are going to spend more and a few dollars collecting stamps of the past 75 years, and also if you are going to be collecting higher value stamps of the earlier years.

Stamp collecting is primarily something you can do to have fun and learn about other countries and their history.

If you want to invest your money to make a long term profit a better investment is something like the stock markets with an investment horizon of 10 to 20 years so you can ignore the temporary ups and downs.

I bought some from Tanzania, Uganda and Malawi, with the oldest being 1993 :)

These countries all have heavily counterfeited souvenir sheets and stamps that have flooded the market along with legitimate souvenir sheets but that were made only to sell to collectors of 'topical' stamps that have nothing to do with the country itself. Topical stamps are those that appeal to non-stamp collectors such as having images of international celebrities such as rock stars or royalty or space exploration, or animals, or forms of transportation, etc. that have nothing to do with the country that issued them. Just a few of examples from just Tanzania which you mentioned you purchased some souvenir sheets from are the Elvis Pressley souvenir sheet or the Beatles souvenir sheet, or the 100th anniversary of the automobile. or Chairman Deng Xio Peng, or James Dean, or Marilyn Monroe, or the many other souvenir sheets of topics that are not even remotely connected to Tanzania. If you enjoy collecting these then that is wonderful and there are countless souvenir sheets from a large number of countries so you can build your collection for many years and enjoy it all that time. However, you might keep in mind that selling such a collection at some point in the future is likely to bring a disappointing amount of money - far less than what you put paid for the stamps.

So stamps from Tanzania which are of animals cannot be used for postage?
