Found this in a large lot I purchased, Taxe de Consommation, it has glue on back. Timbre in top of red cancel.

Pâtiss(erie) St.-Joseph was a bakery/pastry shop. This is a revenue stamp printed in roll form. I could guess it was in this form to allow rapid application to the boxes or receipts as goods were sold. Perhaps someone can provide an approximate date for this.
