Remember that replacing pages in an enormous Minkus binder is very different from replacing pages in a much smaller binder - far fewer pages to remove, and so on. In my Scott Internationals which also have the same rod and post system, I can replace a page in less than a minute every single time. It's just a matter of keeping the pages I've removed in a nice neat stack, and if some pages move a little, I just put my stamp tongs in the holes and gently line them up again. Easy as pie.
If you like the Scott Universals better than I did, then your problem is solved. Not cheap, though, are they? Keep them "new" in case you decide to return them.
As for loose-leaf binders, I again suggest browsing
Amazon. Search photo album binders or "Leather ring binders" to eliminate the junky ones. Here's a pretty nice one that doesn't look at all like an office supply store binder. I know it's used by some collectors for stamp albums:
