Why are some surcharges/overprints black and some red - if there is any special reason at all? Also, are there more color variations that someone can share from their collection?

Without having a specific issue to discuss, the most obvious reason is color contrast with the stamp it is applied to.
Yes, there are overprint colors other than red and black.

Carmine was used because black clashed with the black ink used for cancellations.



However, you may question these stamps, actually, were overprinted. The stamps were never issued without the overprint.

Just today I had the chance to examine a set of German Polar Flight overprints and the ovpt is in brown (dark brown).
