Actually, it reads:
"Euer Erntedank
Esst Vollkornbrot"

which translates to
"Your thanksgiving
Eat wholemeat bread"

How do you translate "Vollkornbrot Volksgesundheit" ,which are the first words ?

Vayolene is translating the words in the circle at the centre of the ears of wheat and DrKohler those to the right of the ears of wheat. Both are correct.

Hate to be the bearer of bad news, but there really is nothing but very common stamps shown in your pictures. A lot are also very badly damaged by having significant portions of the perforations cut off. If these were mine I would throw out the damaged ones and if you aren't planning on starting a collection, I would place the good ones in an envelope and place them in a stamp catalogue in my local library for someone to enjoy.
