As you can see in the upper left corner of your first card, someone has written UX5. That is your Scott's catalogue number. Issued in 1875.
The second with U.S. Grant is SC#UX10 from 1891.

They are both government postal cards, listed in the U.S. Scott Specialized; the "coffee" card is #UX-4 ($400 used) or #UX-5 (45 cents used) in 2008. #UX-4 is watermarked, #UX-5 is not. The "Grant" card is #UX-10 cataloged at $1.50 used. Because of the printed advertisement on the "coffee" card, if it is the common card #UX-5, it should sell for several dollars, well over catalog value, especially because it is an early usage.

I'd like to see a sharper scan of the "D" marking on the second card.

Doug is quicker on the button.
The UX4 is watermarked ($350 2012 value) and UX5 is unwatermarked (45c - price unchanged). UX10 in 2012 is $1.75.

Regarding your Arbuckle Brothers card, here's some trivia published in the fourth edition of the Uncle John's Bathroom Reader by the Bathroom Reader's Institute (St. Martin's Press, 1991).
....what? where do you do most of YOUR reading?

anyway,
'John Arbuckle, a turn of the century Brooklyn merchant, sold his own popular blend of coffee. He needed a brand name for it, and decided to make one up using the letters that appeared on the shipments of coffee beans he received.
AB
NY

(Arbuckle Brothers, New York)
The combination he liked best was Yban. But it wasn't quite right - so he added the letter u.'

look familiar?

On the other hand, Kraft Foods, who now own Yuban give this explanation on their website,

'The origins of the Yuban Coffee Company date back to the turn of the century with a young coffee merchant named John Arbuckle from Brooklyn, New York. During the Christmas holiday season, Mr. Arbuckle would serve a special coffee blend to his family and friends during his annual Yuletide Banquet. Thus he began calling his coffee Yu-Ban, a name that continues to inspire the Essence of Coffee.'

I like Uncle John's explanation better. Besides, I really do have an Uncle John.
You be the judge.
