Just wondering if someone would be able to provide me the Scott numbers and catalogue values for the following stamps.

Also details of any varieties for these stamps would also be very much appreciated

I only have 2011 Scott.

Hong Kong #174, $3.75/$2 for mnh/u
Hong Kong #175, $5.75/$1 for mnh/u

I'm certain there are some plate varieties or EFOs, but Scott doesn't list any.

Extra Stroke variety. Occurs for both denominations in position R1/2. The "Extra Stroke" is simply an extra horizontal red line, circled in blue in the picture below.
