Is there a website or book that includes all of the errors/variations??

I look in one book and there are no variations and then I look at a website and there are possible gripper cracks, imperf, different colors, etc... for the same stamp??

Most of what I am looking through are older stamps and do not want to miss an error or something.

Short answer, no. Specialist literature exists for everything you can think of, and more. Some of it is long out of print and hard to come by.

If you are able to specialize a bit, it eases the acquisition of literature and knowledge. If you have to be a generalist, then you just keep on accumulating catalogues, and journals, and bookmarks, and forum posts, and...some days I think I collect information, and not stamps.

Sadly there is no all-knowing 'One Book' on stamps and varieties.

As Cjd said, a specialized catalogue is going to list more errors and varieties than a standard catalogue. Specialized catalogues will be focused on a specific country typically though. For example, the Scott Catalogue of Postage Stamps is a standard catalogue. It contains listing for all (most?) stamp issueing entities of the world past and present. Though Scott's does contain a listing for Canada with some varieties, the Unitrade Specialized Catalogue of Canadian Stamps lists many many more varieties for Canada and the provinces.

Going deeper, as one example, I have the book The Admiral Issue of Canada by George C. Marler which is a very detailed 550+ page book focused solely on the King George V stamps issued between 1911 and 1926. Marler's book goes into great detail regarding this issue of essentially 18 different face value/colour stamps. The book breaks down everything from issued formats (sheets, booklets, coils etc.) to shade and plate varieties and more.

I am sure there is an endless supply of literature available depending on how far you want to pursue a particular country, topic, or specific stamp issue. Focus on what grabs your attention and interest and see if you can find some good resources. In time, I am sure your stamp collection and library of information will grow.

The Standard Handbook of Stamp Collecting by Richard McP. Cabeen had a very good identifier plus great reading about collecting.
