Since I use US Letter pages, I've buying sheet protectors to hold my pages. Gives me the advantage of being able to put the stamp pages back to back. I've been using the standard Staples brand stuff:

Is there a protector that other people prefert?

I don't use binders. Pages go in these sleeves and are stored in clamshell boxes:

The sturdy traditionalist, which I am some days of the week, would suggest glassine interleaving. Can be fiddly though. I never know how well the cheap office supply shop protectors will wear - or rather, how the stamps they cover will wear - over time.
