With this FDC of scott #2479, issued 3/11/1991, why would they include the 13c sc#1757e that was issued 6/10/78. I thought maybe due to postage, but that was 25c in 91, not 32c

Also with this same FDC, the cachet says "Coil Stamp"... this is not a coil stamp.

The postal rate increased to 29 cents in 1991, but I don't know on what date.

On Feb 3, 1991 the postcard rate incresed from 15 to 19 cents and the letter rate increased from 25 to 29 cents. An additional 10 cents would be required to use this new stamp on an envelope. The collector used the moose stamp to closely match the fawn and slightly overpay the actual 29 cent rate.

That must be why I don't see any single stamped FDC's. So my next question is does this additional postage distract from it's collectibility? Is there a specific term used to indicated the additional stamp on a FDC.

A single-stamped FDC would have to be on a card - and they do exist. Collectibility or distraction is in the eye of the beholder. Some want exact franking, some want only the stamp issued that day, some like the addition of stamps on a related theme.

Also, a lot of times with these smaller amounts, the same stamp is put on the envelope twice. That would have cost too much for the postage, but be more attractive in my opinion.
Your other question, I can find nowhere that the 19 cent fawn was a coil. In 1991 it would have been a plate numbered coil, and no such thing was issued. It may have been planned as a coil stamp? Reaganomics did some strange things to the stamp programs back then!

The second stamp was chosen "thematically" and not for the postage per se. But it will not do much one way or the other for the value. This is such a common cachet that plenty are available on ebay for one to two dollars, and my bet is that they don't move (sell) often. Artcraft is one of the most common cachet producers, and thus not highly valued. About the only thing that would distinguish an Artcraft cachet to draw attention to it would be a plate block on the cover. Here are two listings on ebay. The first, similar to yours, for 99 cents. The second, with a plate block, for $3.50.
