What would be the norm if any on sheet pages like Vario or Showguard? Would single sided be better than the double sided? More stamps would fit in the album with the double sided and seems the weigh would be less.

I personally use the double sided, as it takes less space and works out a bit more reasonable.
But these are all temporary storage for me, as when I have enough stamps for a particular country, I prepare that album sheets and mount to them.

Another way to use stock sheets is to store them vertically in a box, which makes it easy to page thru them, re-order them, etc.

If you choose to do that, single-sided would be the way to go, as pulling them out to look at the second side - or craning your neck over the top & down the back - might get a little old.

IkeyPikey. I have them in albums standing up right now most of all are single sided sheets/pages. I was trying to reduce if I could.

Single or double - it's a personal choice, there is no right or wrong. I use 1, 2, and 3 pocket black double sided for most of my modern plate blocks and mini-sheets, with the exception of sheets with information on the back like the Civil War or Nature of America, for which I use clear single pocket sheets. I use the doubles mainly for economical reasons, I need half as many for the same number of stamps.

I think your dilemma is how much is it going to cost you to replace pages you already have.

I can't see any downside to using two-sided sheets, unless you are putting items in them that are taller than the pockets. In that case, items could rub against each other, or possible catch and cause damage by tearing or creasing.

BKIng- I have singles now but ran out so, I thought I die
the try something else.
sdtom- They really don't cost that much in difference.
book- learned that from the dinosaur paper stock books being too small and also too tight on the stamps. you couldn't hardly get them out.
