There are no independent countries in Antarctica. The Australian Antarctic Territory stamps, the Ross Dependency stamps (NZ) and the Terres Australes et Antarctiques Francaises (France) would all be representative of Antarctica.
Just answered my own question. Seems that there are 7 territorial claims of Antarctica according to the Antarctic Treaty: Argentina. Australia. Chile. France. New Zealand. Norway. United Kingdom.
Moyock13 - I've never really thought about this as there are no countries down there... So I'm just spit-balling... To round out your 7 continent collection perhaps you could cover that by one Antarctica canceled cover from each of the countries that maintain a claim/outpost there?
Another thing would be to try to collect stamps or covers with Antarctic cancels. McMurdo station and Amunsen-Scott at the south pole both have US post offices and covers cancelled there can be collected. You could probably even send yourself one if you sent the postmaster there a self-addressed stamped envelope with the appropriate postage. Their addresses can be seen at the following link:
