I am trying to complete my US full sheet se-tenants.

Here is what I have:

Scott 1633-1682 - 1976 US State Flags - Own
Scott 1953-2002 - 1982 State Birds and Flowers (Perf 10.5 x 11.25)- Own
Scott 1953A-2002A - 1982 State Birds and Flowers (Perf 11.25 x 11)- Own
Scott 2286-2335 - 1987 North American Wildlife - On Order
Scott 2647-2696 - 1992 Wildflowers - Need
Scott 3561-3610 - 2002 Greetings From America (34 cent)- Own
Scott 3696-3745 - 2002 Greetings From America (37 cent) - Own
Scott 4033-4072 - 2006 Wonders of America - Need

Is that all of them?

Perhaps 3136, The World of Dinosaurs? Although, due to the sheet layout, these are not all se-tenant.

What about the 'smaller' sheets like:
Scott 2869 - Legends of the West
Scott 2975 - Civil War
Scott 3000 - Comic Strip Classics
etc...?

Flag Coils, 3136 World of Dinosaurs, 3178 Mars Pathfinder, 3242a Space Discovery, 3320b Aquarium Fish, 1332b Accomplishments in Space... There are many issues with multiple designs in the same issue & a review of the latest Scott might help. Se-tenants I thought were multiple deigns in the same issues separated by the perforations, so there are many coils & booklets with multi-designs in the same issues. Some issues go to 1975-76, some more recent but there are plenty more than you have noted.

Another possibility are the WWII panes. While a full sheet of 20 stamps only has 10 different designs, one must collect the full sheet (or at least the center 10 stamps from a full sheet) to obtain all 10 stamps in se-tenant format. I know that, after a bit of thought, I added these to my full sheet se-tenant collection. My list, with WWII & World of Dinosaurs added, matches yours.

@stampCat7, I beg to differ. The Legends of the West and Civil War sheets are most definitely se-tenant in that they are all different designs adjacent to each other. Much like the state flags, birds and flowers and wildflowers issues that the OP described in their original post. There are actually several sheets issued around that time that have 20 different designs all within one sheet.

I, too, thought se-tenants were large designs that spanned across perforations, but Wikipedia says otherwise.

Don't forget the 1976 Bicentennial Souvenir Sheets: #1686-89. They are my favorite, the artwork is exquisite!
