Found these stamps with a single letter on back of these stamps. Is this something done to show ownership or is this a signed stamped, but every stamp I have seen, signed has never been just one letter. Thanks for your thoughts!!

These look like owners' marks. This was a common practice many years ago.

There are several threads here about this practice.
