While you don't show us any examples, one general thought come to mind ... that by having several PO boxes, Knox was letting the post office do much of the work of their corporate mail room separating mail among the departments. And more specifically, some companies also used a different PO box for each mail-in contest or special offer.
One of the other reasons for using separate post office box numbers was for the identification of the particular ad to which the writer was responding and therefore the effectiveness of that specific advertisement.
Looking through what I have one cover is addressed to the book department - I assume asking for a recipe book and the others to various box numbers which I assume were asking for samples as the add shows.
