I am been searching my first stamp lot and I came across these printed on postage bits that some are from the 1930's or maybe older.
What are these things called? are they on any online catalogs and do they have any monetary value, I have got alot of them.

These are cut-outs from postal stationery. Mostly collected in their entirety, but lots of folks collect the cut-outs. They are listed in the Scott catalog

In that website the bottom 1 cent jefferson does not seem to be shown, is there some other place that this may be? It is not impressed, so it's flat.

The website is for envelopes, wrappers, and letter sheets. The one cent you reference is a postal card.

I think that the 1 Cent Jefferson comes from a pre-printed postcard from 1914. You can look up Scott UX27.
