The first image shows a bottom left pair of these stamps which I'm guessing includes the counting number?



The second image, another pair. Is that '2' the Plate Number, or have I got it backwards (or completely wrong)?

Since both of those numbers are printed in a different color than the stamp itself, they are likely some part of accounting number, not a plate number. The '1' is the right color, so might be a plate number.

Good point about the colour of the numbers! Thank you!
I'd love to know the significance of all the other remaining numbers that are in black.

The number 89782 is the sheet number or as you
mention the "counting number"

The 2 is probably the plate number but I'm not sure when it
comes to these stamps printed via typography.

For engraved stamps the French printer marked the sheets
like this




Sheet number / Printing press Taille-Douce 6 colours - plate 1 / date
