There are countless Bank Note era 'fancy' cancels that are collected. Stamp Smarter has several resources which can help you better understand their scope and breadth. The 'Fancy' cancel' definition, much like the term 'EFO', seems to have broadened considerably over the last 20 years. I think this is largely due to marketing puffery from sellers who over describe their material in an effort to make a sale.

I would say that 'fancy' cancels are typically are considered worth more than the same stamp without a 'fancy' cancel. But the range could be a dollar (US) or two to exponentially over catalog values.

I would also say that if you pull the cancels you show above from the stocks sheets you previously showed, you will have lowered the demand for the entire lot. It is not unusual for people to 'salt' US Bank Note lots/accumulations with these kinds of cancels to help generate more sales interest.
