stampcover, welcome to this forum. Your question cannot be answered properly without more information (where are you located, how much and what kind of material do you have to offer, etc.). There is no single "best" auction house for early US material - your choice would depend on these and other factors. The items you show as examples are classic but not rare, which would also be a factor in determining how to sell them. If you want to avoid ebay or HipStamp then you might want to sell directly to a retail dealer if you can find a stamp show or bourse nearby.

Moving on, I am curious why the strong aversion to using ebay and the desire to use second-tier and third-tier marketplaces? The covers you have posted are exactly the type of material commonly bought/sold on ebay - reaching the broadest market through direct sales to stamp collectors, postal historians, local historians, civil war buffs, etc. What you show would be one lot any nearly every auction house which would accept it.
