Are the album pages with the pockets, like Lighthouse Vario pages, safe long-term? I HATE licking stamp hinges, so I was thinking that an alternative would be those pages, at least for my worldwide stamps. But I was reading about foxing, and it seems like it comes from humidity and the stamps not being able to breathe in an enclosed space. So would keeping stamps in those pages for a long time cause foxing?

Foxing comes from a hundred things. If you have a humidity problem you will have problems no matter how you store your stamps. Vario pages are super high quality and are probably one of the best possible storage solutions, versus unbranded mystery plastic.

Turn over the pages of your album/stockbook at least once a month
