So from what I gather covers are envelopes with stamps on them? Why are these so special and what can be considered one and what isn't? Is there a difference?

Covers are any item that was the "wrapper" that has been postmarked. Some people collect stampless covers prior to the use of stamps, first day covers postmarked on the day the stamp was issued. Most collectors that collect covers that are non philatelic in nature are considered postal history colletors. I hope this helps.
