Don, my 3-in-one takes twice as long to scan at 1200 as it does at 600. Technically, does that have any significance?

Yes, it means that it is using it's optical resolution and not using software to emulate a higher resolution. Your scanner has an optical resolution of 1200 dpi (I looked it up online.)

Edit: better quality scanners have optical resolutions north of 4800 dpi, some go up to 7200 dpi.
