The aurochs (Bos primigenius) is an extinct species of large wild cattle that inhabited Europe, Asia, and North Africa. It is the ancestor of domestic cattle. The species survived in Europe until the last recorded aurochs died in Poland in 1627.

The newest Swiss stamp, due to be issued next week. The Simmental lies in the southern half of Switzerland, north of the Matterhorn. This breed of cattle is surefooted enough for the pastures on the alpine slopes. In the summers the high valleys are filled with the music of their bells. Bringing the cattle down (and all the cheese produced over the summer) to the villages in the fall is always a colorful festivity.

Steer and hypodermic needle, designed by French artist Pierre Opic (1933- ), engraved by Gilbert Aufschneider (1927- ), and issued by Senegal on August 17, 1968 to publicize the joint campaign against rinderpest (cattle plague), Scott No. 307. Note: The UN's Food and Agriculture Organization declared rinderpest eradicated in 2010, and the World Organization for Animal Health (OIE) declared it eradicated the following year. Bonus: Skeleton.

I'm thinking of scaling down my WW collection and just doing cattle, I have not decided if I want to include modern art versions and buffalo in this yet. Do any of you have any idea of the number of stamps with cattle on them?

qaman - the American Topical Association checklist for Cattle/Oxen/Bovine/Cows has 1660 entries, and its Bison/Buffalo list has 434 entries.
The Freestampcatalogue topical list for Cattle has 1840 entries (although that includes some sheep and goats):

This 1991 stamp from the Republic of South Africa depicts a Bonsmara bull.

From the Oklahoma State University Department of Animal Science website, "The Bonsmara has been scientifically bred and strictly selected for the extensive cattle grazing regions of South Africa."
