The 50pf. value of the D.D.R.'s June 25, 1985 set of 5 stamps depicts a pair of banteng.

From Wikipedia, "The banteng...also known as tembadau (Bos javanicus) is a species of wild cattle found in Southeast Asia...there are around 1.5 million domestic banteng, which are called Bali cattle."

One stamp in Ireland's October 15, 1992 "Food and Farming" strip of 4 setenant 32p stamps features cattle and dairy cows.

On November 6, 1995 Greece released a set of 5 stamps on the theme of "Jason and the Argonauts". The 150d stamp (Sc#1825) depicts Jason taming a fire-breathing bull of Aeetes on his quest for the Golden Fleece. He is under the watchful eyes of his lover Medea, and Nike, the goddess of victory.

A man riding a bull is pictured on this 1986, 1.4 million Bolivianos stamp of Bolivia. The value on the stamp indicates that the country was having some problems with inflation at the time of issuance.

Sorry, I cannot find the meaning/significance of the bull rider on my web search.

Stamp was issued to celebrate the tricentennial of the founding of the city of Trinidad. The official name of the city is La Santisma Trinidad, or The Most Holy Trinity. From Wikipedia, "Trinidad was originally a small Jesuit town but is now a large city with over 100,000 inhabitants." It is located in the north central part of the country in the Department (State) of Beni. This a tropical area with Amazon River tributaries and plentiful rain.

Oxen can be seen in the painting on this 1994 commemorative honoring Bangladeshi artist Sheikh Mohammed Sultan. The 6 taka stamp shows his painting Tilling the Field - 2.

From Wikipedia, "Sheikh Mohammed Sultan (known as S. M. Sultan; 1923-1994) was a Bengali avant-garde artist who worked in drawing and painting. His fame rests on his striking depictions of exaggeratedly muscular Bangladeshi peasants engaged in the everyday activities of their lives."

Between 1993 and '97, the Philippines issued small-sized, domestic rate sheets of stamps depicting various "National Symbols", such as the flag, tree, fruit, bird, and others (17 total, I believe). Usually, the vignette stayed the same as the postal rate changed. Here are two different views/vignettes of the "kalabaw" (English = carabao), one is from 1994, and the other from 1996. The 1996 stamp has a gold foil overprint inscribed "100 kalayaan" indicating the centenary of independence from Spain.

There seems to be some disagreement about the "kalabaw" being the national animal. From Wikipedia, "The carabao is a domestic, swamp-type water buffalo (Bubalus bubalis) native to the Philippines. Despite the popular notion that this bovine has been declared as the national animal of the Philippines, the National Commission for Culture and the Arts of the Philippines has stated that this is not the case as it has no basis in Philippine law."

Baoulé cattle, designed and engraved by French artist Georges Bétemps (1921-1992), and issued by Central African Republic on October 1, 1968 as one of a set of five stamps publicizing "Operation Bokassa," Scott No. 102.

On October 15, 1964 the DDR issued a set of fifteen 10 pf. stamps recognizing "15th Anniversary of the DDR". Stamps depict different trades and industries of the country. This stamp, Michel #1060 A, shows and a dairy worker with milk cows.

This August 10, 1998 packet/parcel card from Mallorca, Spain to Fuerstenfeldbruck, Germany is franked with 21 stamps totaling 1783 pesetas postage. Only one stamp is a commemorative. It is the July 14, 1988, 50 peseta. issue (Sc #2560) for Spain's participation in World Expo '88 held in Brisbane, Australia. The stamp shows a painting of a charging bull.

Here is Singapore's January 9, 2009 "Year of the Ox" set of 3 stamps with ordinary gum. They are Stanley Gibbons #s 1827-9.
