Not much you can do, either than change email address or let your junk mail settings deal with it.
Most of the spam I get is detected by my Norton360 and placed in a spam folder. Rather than having it automatically deleted, I chose this approach because I report all spam I receive to the Federal Trade Commission (spam@uce.gov) and to my internet service provider (spamdetector.notcaught@verizon.net).
If the spam is portraying itself as a financial institution (such as American Express) or another recognizable entity, I'll also forward it to that institution's security department if I'm able to find an appropriate email address and to reportphishing@antiphishing.org.
I don't know if all of this accomplishes anything but it makes me feel as if I'm fighting back.
