I am new to stamps, and I recently was given access to a sizable collection of United Nations, US, and Canadian stamps. I am using the 2016 Scott catalog, and am creating an EXCEL file of the stamps.

Are FDC stamps that have been cancelled at UN NY considered Unused or Used?

If I have a FDC for a multiple denomination issue, may I use the price for each denomination or only for the complete multiple issue?

Stamps that are on an FDC are used - they are cancelled, although some collectors may argue they aren't truly "postally" used.

Sorry, I don't understand the second question. What do you mean by "may I use the price"?

RINGO.....I think he's asking how to est. value for a multiple stamp FDC. But as an aside to dancer I personally recommend against spending too much time on developing lists and catalogues if you are early in the game. Take some time to just look and enjoy. Do the analysis and record keeping later. Just my humble opinion.

Yes, Ringo and Canada Stamp, in the second question, I am asking if I need to have each denomination of the issue to use the catalog-listed price? In other words, if I only have one of the denominations of a two-denomination issue, I don't have a price to go by, correct?

dancer - I think the advice to you to not get too deeply involved in a master "price" list is good advice ... catalog prices have little to do with value unless you are looking at stamps and covers from the very early days (1847-1890s, or so). The prices are what you would pay to buy items (in absolute perfect condition), not what you can sell them for. Reading the catalog's introduction would be helpful to you.
