I found this France cover in a lot I bought, its my first one !
How to evaluate this ? Is the blue Ceres any variety ?

Yes in fact it is a variety.Break in the left side of the frame in the upper right box.Small dot below the lower left petal in the lower right box. 2nd state type from the III Republic 1871 -75 Yvert 60b.
I do not have a recent catalog for the price on cover.I will see for some examples...

The price seems right.Now given that the cancel is a TPO or "Ambulant Lp _Lyon -Paris"
and the document is interesting, there may be a premium for this cover in the real world.

First of all, mint early French stamps are very expensive Simply because they are scarce.
The last cover shown has a losange numeral cancel which is very common.That is why it's much cheaper.

No; I do not have a mint Ceres.
Some more info on Teste.
This company, founded in 1843 by Anatole Teste (1821-1887), manufactures both haberdashery and large load-bearing cables. Mr Teste is associated with the Saar Franz Neuss, the first is responsible for the second management of manufacturing, it is then a modest factory sewing needles and knitting for the local market. From 1855, Neuss part of the company which becomes then Teste and company, Vaise aiguillerie. A carbon steel wire mill is then developed, which is the raw material needed for haberdashery for making glass-headed steel pins. In 1868, Anatole associated his son Auguste with the management of the partnership Teste father and son. In 1885, a new association with Jules Moret brings his own activity: the manufacture of frames for umbrellas and umbrellas and also began in 1897 in the manufacture of automobiles. Steel wire is drawn and tempered for umbrellas, steel is cut for the manufacture of corsets. In 1886 a metal wire workshop was installed and in 1891 began the manufacture of cable air carriers for mountain countries. In 1890 the factory covers 15 000m˛ in Vaise, uses 500 HP of installed power and employs 600 workers which makes it one of the most powerful establishments of Lyon. On May 27, 1944 the company Teste is bombed rue de la Claire in Vaise. It maintains an autonomous activity until the aftermath of the Second World War where it is then integrated into the group Tissmetal, extension of the site in the same street. A warehouse is also located at 47 rue de Saint-Cyr. Currently the site is occupied by the School of Social Services South East.
